We offer a variety of specialty grains, including organic spelt (limited quantity), organic and transitional rye, organic buckwheat (un-hulled, limited quantities), and (coming soon) organic emmer, einkorn, and oats.

Buckwheat is one of the most beautiful and important crops in our organic rotation. It suppresses weeds, breaks disease cycles, and builds the soil. Pollinators also love it, and we love pollinators! Buckwheat may be milled into a hearty, nutritious flour, or malted for beer.

We grow heirloom Danko Rye, as well as the hybrid Brasetto. Originally from Poland, Danko is valued by bakers, brewers, and distillers for its deep, nutty flavors. Brasetto was developed by the German breeder KWS to have excellent flavor and high yield. Both rye varieties produce authentic European-style rye breads.

Spelt is an ancient grain—an 8,000-year-old relative of durum wheat that originated in present-day Iran. From the near-East, it spread rapidly throughout Europe, becoming especially popular in Germany. Spelt has never been hybridized, so it has retained its complex flavor profile and wholesome nutrient profile.
